1. Place the broccoli, onion, lemon juice, and salt in a medium bowl. Mix, then let marinate for 1 hour at room temperature.
2. To make the sauce, place all of the sauce ingredients in a food processor and mix until completely smooth. If the consistency is too thick, add water 1 or 2 tablespoons at a time until the desired consistency is reached. Set aside.
3. Rinse the kelp noodles in cold water. Drain them in a colander, then transfer to a large bowl.
4. Pour the sauce over the noodles and mix. Sprinkle the marinated broccoli and onion over the top and serve.
For a Change . . .
* Use pineapple juice instead of orange juice.
* Sprinkle a few tablespoons of dried coconut on top of the finished meal for an exotic taste.
