1. Place the cauliflower in a food processor and pulse until it resembles fine breadcrumbs.
2. Transfer the cauliflower to a large bowl. Add the remaining ingredients and mix well. Let marinate for 20 minutes at room temperature.
3. Once marinated, transfer the tabouleh to plates and serve.
For a Change . . .
* Add 1 cup chopped kalamata olives before marinating.
* Season with salt and pepper before serving.
