Tacos

Ingredients

1 cup raw or untoasted walnuts
2 cups water
1 tablespoon nutritional yeast
1 teaspoon Bragg Liquid Aminos or tamari soy sauce
1 cup Black "Bean" Dip
1 cup Guacamole
1 cup Salsa
16 large Romaine lettuce leaves

Directions:

1. Place the walnuts in the water and allow them to soak overnight, or about 12 hours. Drain, then place the walnuts in a food processor.

2. Pulse the walnuts until they look like large crumbs. Add the nutritional yeast and the Bragg and pulse until all of the ingredients are combined. Be sure to stop pulsing before the mixture becomes mushy—the final consistency should still have some texture.

3. To assemble the tacos, first place a layer of the walnut “meat” on each romaine shell. Next, add a layer of Black “Bean” Dip, then a layer of Guacamole, and finally a layer of Salsa. Arrange the tacos on a plate and serve immediately.

For a Change . . .
* Add a spoonful of Cashew “Cheese” or Molé Sauce to the top of each taco for a more intense flavor.
