Caesar Salad

Ingredients

1 large head Romaine lettuce torn into bite sized pieces
1 cup crouton
1/4 cup grated Parmesan cheese
DRESSING
1/4 cup olive oil
2 tablespoons Worcestershire sauce or balsamic vinegar
juice of 1 lemon
1 egg optional
1 teaspoon anchovy paste
pinch salt
pinch black pepper

Directions:

1. Place all the dressing ingredients in a blender or food processor and blend for 30 seconds on medium speed.
2. Place the lettuce in a salad bowl along with the croutons and Parmesan cheese.
3. Add the dressing and toss the ingredients together well. 4. Serve with some fresh Italian bread.

How to Coddle Eggs
Raw eggs, a traditional ingredient in Caesar salad dressing, can contain salmonella bacteria, so many people (and restaurants) omit them. If, however, you want to use a raw egg, you can coddle it to kill any possible bacteria. 1. Place the egg in a pot with lukewarm water and bring to a boil. 2. Boil the egg 30 seconds, then run the pot under cold running water. 3. The egg is now ready to crack open and use.
