1. Break cracker sheets along score lines into 4 pieces. Place on baking sheet.
2. In small mixing bowl beat egg whites, cream of tartar and orange extract on high speed of electric mixer until foamy. Gradually add sugar, beating until stiff peaks form. Pipe or drop by rounded teaspoonfuls lengthwise down crackers.
3. Bake at 300°F for 25 to 30 minutes or until light brown. Cool.
*NOTE: Each cracker sheet measures about 5 x 2-inches and is scored into 4 pieces.
