Combine all ingredients in a serving bowl. Chill for one hour to allow flavors to blend.
Cinnamon Crisps:
Combine vanilla and water in a cup; blend cinnamon and sugar in a separate cup. Brush vanilla mixture over both sides of tortilla wedges; sprinkle with cinnamon-sugar. Place on a baking sheet sprayed with non-stick vegetable spray. Bake at 450 degrees for 5 minutes, until crisp. Makes about 2-1/2 dozen.
