Spicy Sausage Jambalaya

Ingredients

1 (1-pound) package smoked sausage, sliced
2 (10 1/2-ounce) cans mild RO-Tel tomatoes
2 (14-ounce) cans chicken broth
1 1/2 teaspoons Creole seasoning
1 1/2 cups uncooked long grain rice

Directions:

Brown sausage in large skillet. Stir in tomatoes, broth, and seasoning; bring to a boil. Add rice, cover, and simmer 25 minutes. Uncover and cook until liquid is absorbed.

Editor’s Extra: Brown 1/3 cup chopped onion and/or bell pepper with sausage for a more authentic Cajun jambalaya taste.
