Avocado Salad with Mango Dressing

Ingredients

MANGO DRESSING
1/2 cup mango juice
1/4 cup olive oil
2 tablespoons rice vinegar
1/4 ripe mango peeled and chopped
1/4 cup chopped scallion
salt and pepper to taste
SALAD
4 ripe avocados
1/2 cup coarsely chopped red onion
1/2 cup watercress

Directions:

In a blender, blend the mango juice, oil, vinegar, and mango. Remove, stir in the scallions, salt, and pepper and chill.

Peel, pit, and slice the avocados. Fan out each avocado, pitside down, on salad plates. Divide onion and watercress on the plates and drizzle with the dressing.
