Mix the orange juice, sugar, and cornstarch until well combined. Add mango slices and refrigerate, stirring occasionally, for 1–2 hours.
Whisk the oil, vinegar, salt, and pepper until combined.
In a large salad bowl, toss the mixed greens with the oil mixture. Add the tomatoes, walnuts, and onion and gently toss. Top with the marinated mango slices and then sprinkle with Gorgonzola cheese and serve.
