Popeye's Spinach Salad


Serves: 4

Ingredients

1 cup vegetable oil
1/4 cup balsamic vinegar
2 shallots minced
4 to 6 cups fresh baby spinach
3 large tomatoes coarsely chopped
4 hard boiled eggs quartered
1/2 cup crumbled blue cheese

Directions:

Place the oil, vinegar, and shallots in a food processor and blend. Place in a nonreactive container and chill in refrigerator.

Divide spinach among salad plates and top with tomatoes, eggs, and bleu cheese. Drizzle 2–3 tablespoons vinaigrette over each salad. Extra vinaigrette will keep in the refrigerator for a week.
