Preheat oven to 350°.
In a medium bowl, mix flour, butter, powdered sugar and ginger or lemon extract until well blended and forms a dough.
On an ungreased baking sheet, pat dough into a 14 x 6-inch rectangle. Using a pastry cutter or knife, score dough deeply, dividing rectangle in half lengthwise, then score crosswise to make 1-inch bars. Lightly sprinkle with sugar if not glazing after baking.
Bake for 20 to 25 minutes or until set and a light golden brown. Cool completely on baking sheet on a wire rack.
Glaze if desired and break into bars. Store loosely covered if glazedotherwise store in an airtight container.
