1/2 pound chicken uncooked, ground
1 egg white
1/4 cup water chestnuts chopped
2 teaspoons tamari sauce
2 teaspoons sherry
1 clove garlic minced
1/4 teaspoon salt
1 teaspoon ginger root minced fresh
1 teaspoon cornstarch
1 teaspoon safflower oil

2 tablespoons pineapple juice unsweetened or apple juice
2 teaspoons tamari sauce
2 teaspoons ketchup
1 teaspoon cider vinegar
1/2 clove garlic minced
Few drops of sesame oil (optional)
1/2 slice ginger root fresh, minced or to taste
Combine chicken, egg white, water chestnuts, Tamari sauce, sherry, garlic, salt, ginger, and cornstarch. Shape into 4 patties; heat safflower oil in a skillet and brown patties on both sides. Prepare the following sauce.
Sauce:
*Blend all ingredients together. Spoon sauce over patties; cover skillet and cook 10 minutes.
Note: Tamari and soy sauce are interchangeable, but Tamari may be a bit stronger in flavor.
