1 pound beef tenderloin steaks tender lean
3 tablespoons tamari sauce
2 tablespoons sherry
2 teaspoons cornstarch
Hot pepper sauce to taste
2 tablespoons safflower oil
Salt to taste
1/2 cup radishes thinly sliced
Place beef in freezer until fairly firm. Remove and thinly slice. Mix together Tamari sauce, sherry, cornstarch, and a few drops of hot pepper sauce; set aside. Heat safflower oil in a nonstick skillet over highest heat. Add meat and stir-fry constantly until meat loses its deep red color, about 2 minutes. Pour Tamari mixture over meat and continue to stir-fry for another 1 to 2 minutes. Sprinkle lightly with salt to taste. Fill each pita half with meat mixture, adding radish slices for flavor contrast. Serve immediately.
Note: Alfalfa sprouts or shredded lettuce can be added for additional texture and flavor.
