Tuna Macaroni Salad

Ingredients

1/4 cup vegetable oil
1/4 cup mayonnaise
3 tablespoons lemon juice
2 teaspoons chives chopped or green onion tops
1/2 teaspoon salt
1/8 teaspoon black pepper
1 cup macaroni (4 oz.), cooked, drained, and cooled
1 (6 1/2-ounce) can tuna chunk white, drained and flaked
1/4 cup celery chopped
1/4 cup carrot grated

Directions:

Place oil, mayonnaise, lemon juice, chives, salt, and pepper in a medium bowl. Whisk until blended. Gently stir in macaroni, tuna, celery, and carrot until well coated.

Mound in center of platter. If desired, garnish with slices of tomato and zucchini or cucumber around outer edge of platter. Cover and chill before serving.
