Creamed Cauliflower


Serves: 4

Ingredients

1 1/2 pounds fresh (or two 10-oz pkg. or frozen) cauliflower
1/4 teaspoon butter seasoning granules
1/2 teaspoon parsley flakes or 1 Tbsp. fresh parsley, chopped
1 cup 1% low-fat cottage cheese (8 oz)

Directions:

1. Cook, drain and mash cauliflower. Combine with rest of ingredients.

2. Spoon into baking dish, coated with nonstick vegetable cooking spray. Bake at 350°F for 30 minutes.
