Pretzels

Ingredients

2 tablespoons yeast
2 cups warm water
6 cups flour
1 tablespoon kosher salt
2 tablespoons sugar
1/4 cup honey
3 eggs, beaten
kosher salt, for sprinkling
1 egg white plus 1 tablespoon water, lightly beaten

Directions:

In a large bowl, combine the yeast and warm water. Add flour, salt, sugar, honey, and eggs. Mix thoroughly for about 10 minutes. Let the dough rest and rise for 10 to 15 minutes. Divide the dough into 4 ounce portions and shape into pretzels. Place in Dutch ovens and let rise for 1 hour. Brush with 1 egg white and 1 Tbs. water lightly beaten and sprinkle with kosher salt. Bake in Dutch oven at 425°F for about 20 minutes.
