Whisk eggs, sugar, salt and vanilla together; beat well and set aside. In a medium saucepan over medium-low heat, heat milk just until bubbles form around the edge. Stir in egg mixture; pour into crust. Sprinkle nutmeg on top. Bake at 475 degrees for 5 minutes. Reduce heat to 425 degrees and continue to bake for 15 to 20 minutes, until top is golden. Let cool before slicing.
