Roll pizza crust into a 12-inch square. Cut into 4 squares. over half of each, sprinkle 2 tablespoons mozzarella cheese, 8 slices pepperoni, and 3 tablespoons ricotta. Divide pepper and onion onto each square; top with remaining 2 tablespoons ricotta. Fold plain dough over filling, pressing edges with a fork to seal. Place on lightly greased baking sheet. Bake 13–18 minutes at 400° till golden brown.
