Slice cold meat thinly. Sauté onion and pepper slices in oil in cast iron skillet or on grill top; add steak slices and cook until meat lightly browns; add salt and pepper to taste. Heap cooked mixture on two sides of pan; divide cheese over meat until melted. Slice rolls lengthwise. Using a spatula, scoop each mixture and lay on bread bottoms with cheese on top. Cover, slice, and serve with pickles.
