Preheat oven to 450°. Heat cast-iron skillet; brown rib-eye in 1 tablespoon butter and oil on medium-high heat for 2 minutes. DO NOT TURN. Put skillet in oven for 8–11 minutes till desired doneness.
Meanwhile sauté onion in small skillet in remaining 2 tablespoons butter. Stir in soy sauce. Toast buns and drizzle some of the meat juices on each inside. Slice rib-eye thinly and divide on buns; top with sautéed onions.
