Lemon Chicken

Ingredients

1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon garlic powder
1/3 cup lemon juice
1 pound raw chicken pieces

Directions:

In a 1 gallon bag, mix thyme, salt, pepper, and garlic powder. Pour in lemon juice and squeeze to mix. Place chicken pieces in the bag. Label and freeze.

When ready to serve, thaw chicken in refrigerator or microwave. Preheat oven to 450° F. Spray an 8x8x2 inch baking dish with non-stick coating. Arrange chicken, skin side down in prepared pan. Pour marinade over chicken. Bake for 20 minutes. Turn chicken over and baste with juices. Continue to bake for 15-20 minutes or until chicken is tender and no longer pink when cut along the bone.
