Versatile Beef Lasagna

Ingredients

1 (6-ounce) can tomato paste
2 teaspoons basil
2 cups (16 ounces) cottage cheese, small curd
1 egg
6 lasagna noodles, cooked al dente
4 cups mozzarella cheese, shredded
1/3 cup Parmesan cheese, shredded

Directions:

Combine thawed beef sauce, tomato paste, and basil in a large saucepan. Bring to a boil reduce heat. Cover and simmer for 5 minutes.

In a separate bowl, combine cottage cheese with the egg and mix well.

In a greased 13 x 9 x 2-inch pan, spread a third of the meat mixture. Then, layer 3 cooked noodles, half the cottage cheese mixture, and 1/3 of the shredded mozzarella. Repeat layers. Top with remainining meat sauce and mozzarella cheese.

Cover and bake at 350° F. for 30 minutes. Uncover and sprinkle on Parmesan cheese and bake 5-10 more minutes or until cheese is melted. Let stand 10-15 minutes before serving.
