Combine the garlic, 1/2 cup lime juice, the vinegar, water, and 1 tablespoon salt in a blender and process until creamy and smooth. Taste for seasoning, adding lime juice or salt as necessary the sauce should be highly seasoned. Serve immediately, or store, tightly covered in the refrigerator, for up to 3 days. Serve at room temperature.
