Heat gas, charcoal or electric grill.
In a frying pan, saute onions in butter until tender. Stir in mustard and 1/2 teaspoon salt.
In a separate bowl, combine ground beef, remaining salt, and pepper. Shape meat mixture into 12 thin patties. Spread onion mixture over 6 patties. Top with remaining patties and seal around edges. Grill, turning once until meat reaches 165 degrees and is no longer pink in the center. Serve on buns with your favorite toppings.
