Remove stems from mushrooms and chop; set aside. Soak caps in soy sauce for one hour.
Drain caps; save soy sauce. Mix remaining ingredients with chopped stems. Stuff and mound meat mixture into caps. Brush with soy sauce. bake at 350° for 20–25 minutes, or broil for 8–10 minutes.
