Rhubarb Torte

Ingredients

First Layer:
1 cup flour
2 tablespoons sugar
pinch of salt
1/2 cup butter

Second Layer:
1 1/4 cups sugar
2 tablespoons flour
1/3 cup milk
2 1/4 cups cut rhubarb
3 egg yolk (save whites)
-----------------------
Third Layer:
3 egg whites
6 tablespoons sugar
1/4 teaspoon cream of tartar

Directions:

First Layer:
Combine ingredients and press in an 8x10-inch pan. Bake at 325° for 20 minutes.

Second Layer:
Cook until thick; pour over baked crust.

Third Layer:
Beat egg whites, sugar and cream of tartar. Spread atop cooked rhubarb mixture. Brown in 325° oven for 10-15 minutes.
