Gazpacho Soup


Serves: 6

Ingredients

4 medium ripe tomatoes, peeled and chopped
2 cloves garlic, mashed
1 medium cucumber, chopped
1 large green pepper, chopped
1 large red bell pepper, chopped
1 cup minced onion
1/4 cup olive oil
2 cups tomato juice
1/4 cup wine vinegar
dash of Tabasco
1 cup ice water
salt and pepper
croutons for garnish
chopped chives for garnish

Directions:

Mix all ingredients in a large bowl and refrigerate 3 hours or longer. You may want to add more vinegar. Pour into chilled bowls and serve with croutons and chopped chives.
