Preheat oven to 425 degrees.
Poke each potato twice with a fork. Bake 50–60 minutes, or until tender. Allow potatoes to cool to room temperature, then cut into 1/2-inch cubes, with or without skins.
In 2-quart bowl, combine sour cream, mayonnaise, and onion, then fold in potatoes. Cover and refrigerate 3 hours. Before serving, add salt and pepper, then sprinkle crumbled bacon evenly over top. Garnish with grated cheddar cheese. Makes 6–8 servings.
