In a 2-quart saucepan, cover potatoes with water and bring to a boil over high heat. Reduce to medium-low heat and simmer 15–20 minutes, or until tender. Drain. Crumble bacon over hot potatoes.
In a separate small saucepan, bring onion, vinegar, sugar, parsley, salt, and pepper to a boil. Stir into potato-and-bacon mixture. Serve immediately. Makes 4–5 servings.
