Hot Mashed Potato Salad

Ingredients

4 medium russet potatoes, diced
1/4 cup dill pickle, diced
1/4 teaspoon dried minced onion
2 tablespoons mustard
1 tablespoon mayonnaise
1 tablespoon salsa
1 tablespoon pickle juice, from dill pickle jar
1/4 teaspoon salt
pepper, to taste

Directions:

Boil diced potatoes 15 minutes, or until tender. Drain and mash potatoes with potato masher. Stir in pickles, onion, mustard, mayonnaise, salsa, pickle juice, salt, and pepper. Serve immediately. Makes 6 servings.
