Make crust with chocolate cookies and 2/3 cup melted butter. Press into 2 pie pans or one 9x13-inch pan. Top with coffee ice cream. Freeze hard.
Make chocolate sauce in double boiler. Mix the unsweetened chocolate, sugar, evaporated milk, and butter. Cook until thick. Cool and pour over ice cream. Freeze. Serve pie with whipped cream and nuts.
Note: To make your own coffee ice cream, soften 1/2 gallon ice cream. Add 2–3 tablespoons powdered instant coffee dissolved in 1 tablespoon vanilla and 1–2 tablespoons rum flavoring. Mix well. Refreeze in sealed container or use to make pie.
