* Splurging for just two new settings of dinnerware and flatware is easier and less expensive than buying a whole new set. Then, snap up some interesting place mats and napkins for two at great prices during "white sales" and seasonal closeouts to give your table new pizzazz.
* Having the right-sized cooking equipment makes it easier to prepare and serve meals for two. Stock your kitchen cabinets with smaller baking dishes, small loaf pans, individual pie or tart pans and six-cup muffin pans. Look for attractive individual casseroles, au gratin dishes and custard cups that can go directly from the oven to the table.
* Planning lively meals with foods that have a variety of flavors, textures, colors, shapes or temperatures makes mealtime more fun and interesting. Follow your mood depending on the season, the weather or if you have a fun occasion to celebrate.
* Choosing the main course first-whether it's meat or meatless-makes it easier to plan the rest of the meal. Some days you'll want a vegetable and potatoes or rice on the side on other days, a tossed green salad or some good bread are enough.
* There's no rule that says you must have a main course plus sides for dinner every day. You may prefer to have your heaviest meal at noon with a light supper in the evening. Some days a soup or salad fits the bill on busy days a sandwich may be the answer. Eggs and pancakes also make great dinners!
* For a change of pace, try a picnic-indoors or out! Serve dinner in the family room, at the coffee table, on the porch or in the backyard. Or get really adventurous and pack up a basket for the park, the beach or an outdoor concert.
