1. Soak the dried beans.
2. Drain the soaked beans.
3. Mince the onion
4. Cut two?thirds of the bacon into 1/4 inch strips, then separate the strips.
5. Place all of the ingredients in a bowl and mix together well.
6. Spoon the mixture into an oven-safe covered casserole dish or Dutch oven. Bake in a preheated 350°F for 3 hours or until the beans are tender.
7. Serve the baked beans as is or topped with crumbled bacon.
