1. Place the eggs, milk, flour, and salt in a bowl, and whisk or beat with an electric mixer to form a smooth ba?er. Let sit for at least 30 minutes.
2. Place 1 tablespoon of the shortening in each cup of a large (6-cup) muffin or popover tin. Place in a preheated 450°F oven for 10 minutes.
3. Remove the tin from the oven. Gently stir the batter, then pour or ladle it into the hot cups, filling them halfway. Return to the oven for 20 to 25 minutes or until golden brown.
4. Serve piping hot, topped with gravy or au jus.
Important tip
When baking the “puddings,” do not open the oven before 20 minutes—not even a little—or they will drop.
