Broiled Cheese and Tomato Sandwiches


Serves: 4

Ingredients

4 wheat bread
2 tablespoons mayonnaise
1 teaspoon Dijon style mustard
4 slices tomatoes
6 Cheddar cheese medium sharp, 1-ounce slices

Directions:

You may substitute 4 English muffins for whole wheat bread. If desired, toast bread on one side or lightly toast English muffins. Spread untoasted side of bread or English muffins with mayonnaise, then mustard. Top with tomato, then cheese slices. Broil until cheese is melted and bubbling.
Note: Many variations can be made on this, such as the addition of green onion slices, zucchini slices, or ham slices.
