* Use Basic French or Vinaigrette Dressing (see below) as a base for this vegetable salad variation. Basic French or Vinaigrette Dressing * In a small bowl, mix vinegar, salt, and pepper let stand 1 to 2 minutes to dissolve. Adding oil slowly, stir or whisk until well blended. Vinegar, salt, and pepper can be adjusted according to taste. Shake or stir before serving. Add 1 tablespoon minced onion, green onion, or shallot and/or 1/2 to 1 crushed garlic clove to basic dressing. Stir well and let stand for at least 1 hour to improve flavor. Remove garlic before serving.
