Vegetable Roundup Salad

Ingredients

1/3 cup vegetable oil
2 tablespoons cider vinegar
1 tablespoon honey
1/2 teaspoon salt
Freshly ground pepper to taste
1 cup broccoli cooked or raw flowerets
1 cup cauliflowerets cooked or raw
1/2 cup carrot thinly sliced
3 green onions sliced
Crisp lettuce leaves
6 to 8 cherry tomatoes cut in half (optional)

Directions:

In medium bowl, whisk together oil, vinegar, honey, salt, and pepper to taste. Add broccoli, cauliflower, carrot, and green onion toss gently. Cover and chill for 2 hours. Arrange in lettuce-lined bowl. Surround with optional cherry tomatoes.
