Mother's Cornmeal Griddle Cakes

Serves: 16

   1 1/2 cups yellow cornmeal
   1/3 cup flour
   1 teaspoon baking soda
   1/2 teaspoon salt
   2 teaspoons sugar
   2 cups buttermilk
   3 tablespoons vegetable oil
   2 eggs separated


Mix dry ingredients. Add buttermilk, oil, and egg yolks; blend well. In a separate bowl, beat egg whites until stiff; fold into batter. Let stand 10 minutes. Cook on hot greased griddle.
