Old-Fashioned Buckwheat Cakes

Serves: 16

   2 2/3 cups flour
   1 1/3 cups buckwheat flour
   1 teaspoon salt
   1 package yeast active dry
   2 1/2 cups water warm (110° to 115°F)
   1/4 cup brown sugar
   3/4 teaspoon baking soda
   2 tablespoons vegetable oil


Combine flours and salt. Soften yeast in warm water; stir in 1 tablespoon brown sugar. Stir into flour mixture. Mix well. Cover and let stand overnight at room temperature. When ready to cook, add remaining brown sugar, baking soda, and oil; mix well. Cook batter on hot, lightly-greased griddle.
