* Use Sauces For Panbroiled Steaks Or Ground Beef Patties (see below) as the base for this variation. Sauces For Panbroiled Steaks Or Ground Beef Patties Use any tender cut of beef. Spread a little butter on meat and put into a well-heated heavy skillet. Over medium heat, cook a 1- to 1 1/2 -inch thick steak 4 minutes on each side for rare; 5 to 6 minutes on each side for medium; 8 to 9 minutes on each side for well-done. Top with one of the following sauces. Note: Broiled ground beef patties can also be served with sauces. To drippings in pan, add 1/4 cup dairy sour cream, 2 tablespoons beef broth, 1 teaspoon minced fresh parsley, 1/2 teaspoon Worcestershire sauce, a touch of salt, and freshly ground pepper. Heat, stirring; serve over steak.
