More often than not, folks end up with a prepared pancake mix in camp instead of sourdough. Not one to put the store bought mixes down, cause over time I’ve ate my share, but they’re not really in the same league. To put a different spin on the store bought kind try the following. Try replacing the water called for in the mix directions with an equal amount of beer. In camp cook circles a debate exists whether to use stale beer or fresh beer for what some call beer pancakes and what I call "poor man sourdough pancakes". I suppose either would work, but the folks I camp with are not in the habit of opening a beer and letting it set overnight.
A word of caution though! Unless you know the religious affiliations of all who you’re cooking for, it’s best to tell folks about the beer part of their pancakes before they start eating. Telling someone whose religious beliefs don’t include making pancakes with beer, half way through a short stack, will for sure cause problems. I found this out the hard way one time.
I had no idea this woman, who shall remain anonymous, came from a prominent pioneer family in a state which borders Idaho on the south. Someone else in camp had just exclaimed something to the effect "it’s hard to beat good beer pancakes" when this gal began choking. My first thought was she’d got something "down the wrong pipe" as my Dad used to say. In reality though, upon hearing this comment in mid-swallow, she’d instantly lost her appetite. Visions of having to perform the Heimlich Maneuver vanished when she bolted from the tent, followed by the obvious sounds of an airway being re-established. Since then, I’ve made sure to inform my guests of recipe ingredients prior to serving.
