In a skillet over medium heat, brown pork chops in oil. Drain; sprinkle with salt and pepper. Blend together soup, sour cream, water, onion, potatoes and additional salt and pepper. Spread into a lightly greased 13"x9" baking pan. Top with browned pork chops. Cover; bake at 375 degrees for one hour and 15 minutes.
