Grilled Roast Beef & Peppers

Ingredients

1 (12-inch) loaf Italian bread , halved lengthwise
1/2 pound deli roast beef , sliced
1/4 pound mozzarella cheese , sliced
1 (8-ounce) jar roasted red peppers, drained and chopped
2 tablespoons green olives with pimentos, diced
1 tablespoon olive oil

Directions:

Layer bottom half of loaf with roast beef, cheese, peppers and olives; add top of loaf. Brush oil lightly over both sides of loaf. Heat a large skillet over medium heat; add loaf carefully and cook for 2 to 3 minutes on each side, until golden and cheese has melted. Slice loaf into sections to serve.
