Praline Pecan Mini Cakes

Ingredients

1 (18 1/4-ounce) package butter pecan cake mix
1 (16-ounce) container coconut-pecan frosting
4 eggs , beaten
3/4 cup oil
1 cup water
1 cup chopped pecans , divided

Caramel Frosting:
1/4 cup butter
1/2 cup brown sugar , packed
2 cups powdered sugar
1 cup heavy whipping cream

Directions:

Combine all ingredients except pecans; mix well. Stir in half the pecans. Divide remaining pecans among twelve, lightly greased mini Bundt® pans; pour batter over pecans to fill 2/3 full. Bake at 350 degrees for 50 minutes, or until a toothpick inserted near the center comes out clean. Cool slightly; turn out cakes and drizzle with frosting.

Caramel Frosting:
Melt butter in a saucepan over medium heat. Add brown sugar; cook and stir to boiling. Cook for one minute, until slightly thickened. Cool; stir in powdered sugar and 1/8 cup cream. Add remaining cream to make a drizzling consistency.
