Mexican Pizza

Ingredients

2 teaspoons cornmeal
1 (1-pound) loaf frozen bread dough, thawed*
1/2 to 1 pound ground beef
1 small onion, chopped
2 to 3 cloves garlic, minced
1 (16-ounce) can refried beans
1 cup medium salsa
1 (4-ounce) can chopped green chili
2 teaspoons chili powder
1 to 2 cup grated Monterey Jack cheese
2 tomatoes, diced
1 to 2 cup shredded or torn lettuce

Directions:

Preheat oven to 425 degrees.

Spray a 12-inch pizza pan or 8 1/2 x 11-inch pan with nonstick cooking spray. Lightly sprinkle cornmeal on sprayed pan, covering well. Roll dough on counter to fit bottom of pan. Place prepared dough in pan and then prick with fork all over. Bake for 10–12 minutes, or until lightly browned. Remove from oven and set aside.

In a large frying pan, brown ground beef, onion, and garlic. Drain if necessary. Combine refried beans, salsa, green chiles, chili powder, and cheese with cooked beef and heat through. Spread meat mixture over crust and return to oven for 5–7 minutes. Remove from oven and sprinkle with tomatoes and lettuce.

*To thaw bread dough, place loaf on plate and cover with plastic wrap that has been sprayed with nonstick cooking spray. Place plate in refrigerator 24 hours before preparing recipe.
