Sweet and Sour Meatballs

Ingredients

1 egg
1 cup bread crumbs
2 to 3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds ground beef
2 teaspoons vegetable oil
1 cup chicken broth
2 large green bell peppers, cut into chunks
2 (8-ounce) cans unsweetened pineapple tidbits, juice reserved
1/2 cup sugar
3 tablespoons cornstarch
1/2 cup cider vinegar
2 to 3 tablespoons soy sauce
8 cups hot cooked rice

Directions:

In a bowl, combine egg, breadcrumbs, garlic, salt, and pepper. Break up ground beef over egg mixture and combine well. Shape mixture into 30–40 meatballs.

In a frying pan, brown meatballs in oil. Add broth, bell peppers, and pineapple to meatballs. Bring to a boil. Reduce heat and simmer for 5–7 minutes.

In a separate bowl, combine sugar, cornstarch, vinegar, soy sauce, and reserved pineapple juice until smooth. Pour over meatballs. Bring to a boil, reduce heat and simmer for 2 minutes, stirring constantly. Serve over hot cooked rice.
