Rub the beets with olive oil, wrap in aluminum foil with the rosemary, thyme, garlic cloves, salt and pepper and roast for one hour at 350 degrees. Allow to cool and rub the beets with a paper towel to remove the skin.
Dice the beets. Mix in the goat cheese and balsamic vinegar and serve on lettuce or endive leaves.
