Lemon Spinach


Serves: 4

Ingredients

1 pound fresh or frozen spinach, washed and drained
zest of 1 lemon
juice of 1 lemon
2 teaspoons extra virgin olive oil
1/2 teaspoon kosher salt

Directions:

In a large covered pot with a colander, steam the spinach for 3 to 5 minutes until it begins to wilt. Place the spinach in a bowl and mix in the olive oil and then the lemon zest, lemon juice and salt.
