Brown Rice Pilaf with Kiwi Fruit


Serves: 5

Yield: 4 cups

Ingredients

1 1/3 cups water
1 1/3 cups unsweetened apple juice
1 cup uncooked long-grain brown rice
2 tablespoons currants or raisins
1/4 teaspoon ground cinnamon
2/3 cup peeled, coarsely chopped kiwi fruit (about 2)
1/4 cup diced unpeeled red apple
1/4 teaspoon grated orange rind

Directions:

Combine first 3 ingredients in a large saucepan. Bring to a boil; add currants and cinnamon, stirring well. Reduce heat; cover and cook rice 45 minutes without lifting cover (or according to package directions, omitting salt). Remove from heat, and add remaining ingredients; toss gently.
