Combine tomatoes, brie cheese, garlic, basil, 1 cup olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper in bowl; mix well. Let stand, covered, for 1 hour or longer.
Bring water to a boil in large saucepan. Stir in 1/8 teaspoon olive oil and 1 tablespoon salt. Add linguine. Cook for 8–10 minutes or until firm; drain. Toss hot linguine with tomato mixture in bowl. Brie will melt into pasta. Sprinkle with Parmesan cheese and fresh pepper.
